How to keep Olivier? Can I freeze Olivier?
Galina Vasilievna, that's for sure, I strongly advise you not to freeze the Olivier salad! Although this, of course, is not for everybody. You see, not all of the products that are part of this salad tolerate freezing and subsequent defrosting well. No, they will freeze, of course, well). But this will change their structure. And taste too. Especially potatoes, cucumbers, eggs.
Therefore, store this salad on the top shelf of the refrigerator in a sealed container. I think, in any case, your family will master the "Olivier" in three days). For three or four days with such storage, a well-prepared salad will withstand quite well. And without changing the organoleptic properties!
And there is an option to put it with your guests (treat it) - they will eat the salad at home and will thank you once again).
Happy New Year!
As far as I know, ready-made salad cannot be frozen, since it is not known what will happen to salad dressing after defrosting. It is very likely that it will not be very tasty. But you can freeze separately the cubes of vegetables, already cut and prepared for our salad.
Recently, we stopped dressing salad Olivier (and others) with mayonnaise right away. Store sliced in the refrigerator in a closed container and season immediately before serving. Often we add onions as we dress. If we understand that there are more salad than those who want to eat it, then we put the uncut salad in the freezer. Stored normally, defrost and refuel over time. Of course, fresher is better. But this is also a way out if you overdid it.
You can freeze Olivier and other vegetable salad, but without mayonnaise. Believe me, it is better to season with mayonnaise before serving, otherwise it will serve a negative role. And it is not suitable for freezing. You can cut a lot of salad, but not season it.
In my opinion, just freezing it is not worth it. I think this is because some foods can run off when defrosting, which will lead to the foods themselves becoming like cotton wool, and the salad itself becoming runny. I would definitely not eat such a dish. Therefore, invite someone to visit your Olivier, since it is really a pity to throw away a delicious salad, but you can have a pleasant time in the company and you will have something to treat your guests.
For a longer storage of all salads, mix everything, but do not add mayonnaise. Add mayonnaise before serving and exactly as much as we can eat at a time. For 1 days, salads (herring under a fur coat, Olivier) are safely stored. I do not advise freezing, after defrosting there will be a slimy porridge.
I would not freeze Olivier. All the same, its taste will become much worse than freshly cut vegetables. It seems to me that if you have overdone it, then you can make a stew from potatoes, carrots, peas, and pickles can be added to the stew. You can also adapt the egg, make some pita rolls or add to another salad. We also have not been mixing salad components for a long time, we do it when serving. Mayonnaise will greatly shorten the shelf life of salads.
In order to extend the life of the salad, it is better to store each of the chopped foods separately in a container in the refrigerator, and it is even better to store boiled vegetables but not chopped. As for freezing, this is not a good idea, since boiled vegetables, after freezing, lose all their taste and useful elements.
I have never frozen Olivier, because it seems to me that the boiled potatoes and cucumber will not be very good after defrosting. I just cut all the products and do not season with mayonnaise, because then the salad will not stand for a long time. Before absorbing food, pour the required amount into a bowl and mix with mayonnaise. So the salad can stand up to 4-5 days.
