How to cook dumplings with salmon? Recipe?
In order to prepare Dumplings with salmon, we need: for the dough - 3 eggs, 1 teaspoon of salt, vegetable oil, 1 glass of water, 3 glasses of wheat flour; for filling - 1 kg. fillet of salmon, 3 onions, 2 cloves of garlic, 2 tbsp. a spoonful of lemon juice, sour cream, chopped dill.
Fillet of salmon, onion, garlic must be scrolled through a meat grinder. Add salt, lemon juice, pepper, sour cream, dill and mix everything thoroughly, and then put it in the refrigerator for half an hour.
Break the eggs into a bowl, then pour in water, add salt and mix everything thoroughly. After that, add vegetable oil and, adding flour, knead the hard dough. Cover it with a towel and leave for 15 minutes.
Roll out the dough, make mugs with a glass, fill them, and then fix the edges and set to cook after boiling in sunflower water.
In our region, such dumplings are prepared as follows - the dough is prepared according to the usual classic recipe, as for meat dumplings.
But we cook minced meat from salmon fillet, which we twist through a meat grinder with a piece of fresh pork lard, onions and garlic.
Then we sculpt dumplings that are ordinary in shape and boil them in salted water, and eat with butter, sour cream or mayonnaise. You can serve sauce or ketchup. And sprinkle such dumplings with chopped dill or onions before serving.
You can cook minced salmon, bacon and shrimp. Or there is a second option for squid fillet and salmon with a piece of bacon, you need to twist everything. You will like these dumplings.
I make dumplings with salmon or other red fish as follows. Our dough is not very common. First, take a bunch of parsley or dill and grind in a blender. For better grinding, pour a couple of tablespoons of water there. It turns out a green puree. Pour a heap of flour (about 600 g) and pour our green mixture into the middle. Also add 1 egg, 1 teaspoon of salt to the dough and knead. Then we put aside the dough, cover with a napkin and start filling.
Filling. Throw 500 g of salmon fillet into salted boiling water and cook for about 15 minutes. Then we take out the fillet and knead it in mashed potatoes with a fork. Add chopped 1 clove of garlic and 1 onion. We also pour in the juice of one lemon. Our filling is ready.
Now roll out the thin dough and apply the filling. We splice the edges of the dough and you can send the dumplings either to boiling salt water or to the freezer. Bon Appetit.
Dumplings with salmon.
We make dough for dumplings as for ordinary dumplings: egg, water, flour. I do not put salt in the dough, as the dough begins to crumble from salt.
For the filling:
1) Cut the fish into clean fillets and cut into small cubes.
2) Peel the onion and cut into small cubes.
3) Fry the onions in vegetable oil.
4) Add chopped fish to the fried onion and fry until tender.
5) Salt and pepper. You can add a little oregano to taste.
6) Roll out the dough for dumplings, cut out circles and mold in the form of ordinary dumplings or in the form of bags (collect and pinch on top).
7) Boil water and cook dumplings. It is not necessary to cook for a long time, 5-7 minutes is enough, since our filling is not raw, and the dough will cook quickly.
8) Sprinkle with dill when serving.
