Cheese sauce

On 200 gr finished sauce ingredients:

  • 110-120 gr hard cheese;
  • 1 Stack cream 20%;
  • 1 / 2 tsp. black pepper and 1 / 2 tsp. sweet paprika;
  • 1 / 2 Poo. fresh dill;
  • salt to taste.


1. Pour the low-fat cream into the skillet, onto the stove and bring to a slight boil over low heat.

2. Take a medium grater, chop it cheese, lower it in portions in boiling cream. Stir lightly so that the cheese is only partially dissolved.

3. Then season the cheese sauce with paprika and classic (black) pepper, and salt. Remove the stewpan with fragrant yummy from the stove.

4. Chop the dill finely in the sauce, stir again and cool to warm, as quickly as possible - for this, put the saucepan with the mass on the ice. Stir the sauce from time to time.

5. It is unusually good - in combination with meat and vegetable dishes, it can be spread on croutons and sandwiches. Bon Appetit!

Guacamole sauce

To get the 200 gr sauce ingredients:

  • avocados (necessarily ripe and soft) - 2 pcs;
  • oregano and zira - on a pinch of 1;
  • fresh tomato - 1 pcs;
  • lemon - 0,5 pcs;
  • chili pepper - quarter pod;
  • cilantro or parsley - 5-6 sprig;
  • olive oil - 60 ml;
  • cream from 15 to 20% - 2 tbsp. l;
  • salt and pepper.


1. Wash the avocado fruit, cut it in half with a knife and unscrew the bones. Spoon remove the pulp, rub it with a fork in a bowl to make mashed potatoes. Mix oil in it, then lemon juice, oregano and cumin.

2. Next, take a tomato and, pinned on a skewer, immerse it in boiling water for 10 seconds. Pull off the skin. Finely chop the pulp.

3. Knock out extremely hot seeds from the chilli pod, and then poke the pod very finely.

4. Mix the tomato and chilli into the sauce, then crush the garlic and season with salt. Crush parsley - also in guacamole.

5. Finally, pour in the cold cream in a trickle, while stirring. Guacamole with a spicy and rich taste is ready!

Onion Sauce

To get the 200 gr sauce ingredients:

  • 2 Art. l fat from baked meat or chicken;
  • 1 garlic tooth;
  • 3-4 bulb onions;
  • 1 / 3 Stack cream (20% fat);
  • 1 / 3 tsp. dried dill or oregano;
  • salt and pepper.


1. When you bake meat or chicken, transfer the cooking fat to a small frying pan. Heat and put chopped onion into fat (diced). Toast, stirring, for 7-9 minutes.

2. Finely prick the garlic and add to the onion, stir. After half a minute, season to taste and pour the cream.

3. Wait until the onion sauce begins to boil, put dill or oregano in it and simmer for exactly 2 minutes, the fire is not strong.

4. Before serving, we advise you to beat the onion sauce with a blender - it will be much more fluffy, tastier, and the onion will not be felt at all. Delicious taste!


Ingredients for 200 gr sauce:

  • green olives b / k - 1 Bank;
  • dark olives, also b / c - 1 Bank;
  • garlic - 2 zubika;
  • lemon 1 / 2 medium fruit;
  • basil - 0,5 small bunch;
  • olive oil. - 3-4 Art. l;
  • salt to taste, if desired, ground hot pepper.


1. In a blender, put the olives and olives.

2. Wash the lemon, grate the zest from the halves, squeeze the juice - also into a blender.

3. Then add the garlic to the bowl, cut into pieces. And then the leaves of washed and dried basil.

4. Pour in oil and start the device. Mix to the consistency of the sauce, season to taste with salt and pepper.

5. Serve Greek sauce with fish, meat on coals, baked potatoes and other vegetables, or you can simply put on a pita cake and enjoy the wondrous taste of a simple Greek dish.

Tkemali - Georgian Sauce


  • 3 kg cherry plum green variety;
  • 2 Stack drinking water;
  • 1 hot pepper;
  • 0,5 garlic heads (or 4 large lobules);
  • 300 cilantro leaf;
  • 200 mint leaf;
  • 4-5 inflorescences dill;
  • 1-2 tsp. salt coarse, put on the taste;
  • 2 Art. l sugar or also to taste;
  • 1,5 Art. l sunflower oil (for storage).


1. Wash cherry plum, pre-sorting, removing the twigs. Then pour the fruit into the pan, cover with water and set on high heat.

2. From the moment of boiling, reduce the fire to a small one and boil the berries until full boiling. Grind through a sieve, discard the remnants of the skins and bones.

3. Tie a string of inflorescences of dill and immerse in a plum mass together with a pod of hot pepper, peeled and cut in half. Boil 25 minutes, at the end add salt, to taste granulated sugar.

4. Wash the herbs, chop with the garlic using a blender. Transfer this mass to the hot sauce and cook for another 12-14 minutes. Cool it down. Tkemali sauce is ready!

5. You can, while it is hot, roll it up for storage (for the winter). Pour into small jars, sterilized in advance (within 15 minutes). On top of the sauce, so as not to get moldy, pour a teaspoon of sunflower oil.
