Coconut truffles

Ingredients for Glaze:

  • Xnumx cream;
  • 110 g starch syrup 110 g invert sugar;
  • 2 kg of liquid milk couverture;
  • 200 g butter;
  • 600 g Batida de Coco;
  • tempered milk couverture coconut flakes.

Cooking coconut truffles

Bring the cream, syrup and invert sugar to a boil.

Add milk couverture, then stir with butter and liquor.

Glaze with milk couverture and roll in coconut flakes.

Coffee Truffles

Ingredients for the glaze:

  • 1,5 liters of cream;
  • 110 g instant coffee 180 g invert sugar;
  • 180 g starch syrup;
  • 1,1 kg of liquid white couverture 550 g of hardened solid;
  • vegetable fat;
  • 360 g cocoa butter;
  • 250 g of butter.

Raspberry truffles

Glaze:

  • 600 g cream 200 g starch syrup "200 g invert sugar;
  • 1,95 liters of liquid milk couverture;
  • 100 g butter;
  • 500 g of raspberry tincture (40% strength);
  • 40 g raspberry paste;
  • tempered plain and milky couverture.

Preparation:

Bring the cream, syrup and invert sugar to a boil.

Add the milk couverture, then stir with the rest of the ingredients.

Glaze with a simple couverture, pour on top with strips of milk couverture.
